When a medley of vegetables are cooked in tamarind juice, that’s when you get Sayur Asam. Normally, corn is used but in the absence of 🌽, I use Long beans, cabbage and potatoes to complete my dish.
Firstly I steamed the potatoes and Long beans as they take the longest to cook.
Sayur Asam calls for fresh chillies but in the absence of the fresh ones, I blended 4 dried chillies, 2 red onions & 1 garlic. Saute them all in tamarind & water, add palm sugar. I added ground walnuts (heart healthy nuts) into the mixture and added the steamed vegetables with cabbage and simmer until done. ♨️
Oh how simple it is, love this another oil free dish in our pocket!
